Pain D Epices

Pain d’epices - a sort of gingerbread made with rye flour, eggs, honey and spices, is a traditional cake of Dijon, Cote d’Or. The town produces 750 tonnes per year from 3 factories - in 1911 there were 12 producers making 3 tonnes per day!
